Banana bread recipe

This recipe is a great way to use up any left over bananas that are very ripe and verging on being thrown out!
I don't even like bananas, but I will eat this, it tastes amazing and the kids love it!  The other great thing is, I have this recipe and you don't have to be rigid about the ingredients, it always seems to work! Just go with what you have to hand.
(Roughly 229 calories per serving)
 
Ingredients:
2 cups of all purpose flour (I have used plain flour and wholewheat, I prefer the wholewheat as it's healthier, but either will work)
1 tsp baking soda
1/4 tsp salt (not required if using salted butter)
1/2 cup unsalted/salted butter (about 2 tbsp)
3/4 cup brown sugar (any brown sugar, I have even used soft brown sugar)
2 eggs, beaten
2 1/3 cups mashed, overripe bananas (I use about 6 bananas)
 
Method:
1)  Preheat oven to 175 degrees C, lightly grease a 9x5 inch loaf tin with some butter.
2)  In a large bowl, combine flour, baking soda and salt.  In a separate bowl, cream together the butter and brown sugar.  Stir in the eggs and mashed bananas until blended.  Stir the mixtures together, just to moisten, then pour into loaf tin.
3)  Bak for 60-65 mins, until a toothpick comes out clean.  Let the bread cool in the pan for 10 mins, then turn out onto a wire rack.
